Start by soaking quinoa for at least an hour to remove bitterness if not using pre-cooked quinoa.
Chop sweet potatoes into small to medium-sized chunks, optionally peel them.
Place sweet potatoes on a lined baking tray, season with cumin powder, cinnamon powder, salt, pepper, and drizzle with olive oil.
Bake sweet potatoes in a 200°C oven for around 30 minutes until cooked and golden.
In a bowl, combine chipotle paste, red pepper paste, honey, lime juice, and salt to create the marinade.
Pour the marinade over the prawns and let them sit in the fridge to deepen flavor or cook immediately.
Prepare the quinoa and black bean salad by dicing red onions and jarred roasted peppers, and chopping fresh herbs like parsley and coriander.
Once quinoa is cooked, combine it in a large bowl with black beans, chopped herbs, diced peppers, red onions, extra virgin olive oil, salt, pepper, and a squeeze of lime juice while the quinoa is warm to absorb flavors.
For the dressing, blend coconut yogurt, fresh coriander, jalapeno, lime juice, and salt in a mini chopper until smooth.
In a pan, heat olive oil and gently cook garlic for a couple of minutes.
Add the marinated prawns to the pan, squeeze over more lime juice, and cook for about 3 to 4 minutes until done.
