Roti is a beloved flatbread in Mauritius, influenced by Indian and Creole cuisines. Traditionally enjoyed with curries or as a snack, it symbolizes the island's multicultural heritage. Today, variations like Roti Canai are popular in Southeast Asia, showcasing its global appeal and adaptability.

Almond milk reduces calories and is dairy-free.
Add 250 grams of all-purpose flour to a bowl.
Add 7 grams of salt and 5 grams of sugar to the flour and mix to combine using a wooden spoon or hands.
Add 2 tablespoons of vegetable oil and mix until it resembles little crumbs of flour.
Make a well in the center of the bowl and crack in 1 egg.
Add 1 cup of water and mix until the flour is combined with the wet ingredients, making circular movements.
Knead the dough with your hands until smooth and elastic, about 8 minutes, adding all-purpose flour as needed.
Rest the dough for 20 minutes in a pot.
Flour the countertop and divide the dough into 6 pieces, tucking each piece into a smooth ball.
Brush the top of each dough ball with oil to avoid drying out and cover with a kitchen towel or film.
Let the dough rest for around 1 to 3 hours.
After resting, sprinkle flour on the countertop and press the dough with your hand.
Roll out the dough with a rolling pin until it forms a thin circle, not worrying about perfect shape.
Spread vegetable oil on the rolled-out dough to create layers, then sprinkle more flour on top.
Fold the dough over itself repeatedly, like making a paper fan, until all dough is folded.
Let the folded dough rest for about 30 minutes.
After resting, sprinkle flour on the countertop again and flatten the dough with fingertips.
Carefully roll out the dough again using a rolling pin, being gentle to preserve layers.
Heat a pan over medium heat and transfer the dough to the pan, brushing the top side with oil.
Cook for about 1 minute, then brush the other side with oil and cook for another minute.
Transfer the cooked Roti to a kitchen towel, separating the layers by squashing them gently.
Cover the cooked Roti with a kitchen towel and set aside, noting the air pockets formed in the Roti.
