Roti is a beloved flatbread in Mauritius, influenced by Indian and Creole cuisines. Traditionally enjoyed with curries or as a snack, it symbolizes the island's multicultural heritage. Today, variations like Roti Canai are popular in Southeast Asia, showcasing its global appeal and adaptability.

Olive oil provides a healthier fat option.

Almond milk reduces calories and is dairy-free.
In a bowl, combine all-purpose flour, baking powder, salt, and brown sugar.
Gradually pour water into the flour mixture while using one hand to bring the flour together.
Knead the dough until it reaches a happy medium consistency, not too sticky or too firm.
Cover the dough and let it rest for half an hour.
In a pot, heat vegetable oil and add about 2-3 tablespoons of curry powder and a little turmeric, stirring to fry the spices.
Add half a large onion to the pot and sauté it for a few minutes.
Add about 2 pounds of seasoned chicken to the pot.
Pour in about 1.5 cups of water and cover the pot to let the chicken release its juices.
After 10 minutes, add more water to almost reach the top of the chicken and add 2 chicken bouillon cubes.
Add about a tablespoon of ketchup to the pot.
Boil potatoes in a separate pot for about 20 minutes until softened.
Check the dough after resting, then divide it into about 8 pieces, rolling each into a ball.
Take one ball of dough and flatten it using fingertips, spreading butter on top.
Layer another ball on top of the first and flatten it again, letting it rest on a greased pan.
Repeat the layering process for the remaining dough, optionally creating three layers instead of two.
Check on the chicken and adjust the water level for desired gravy consistency.
Check the potatoes for doneness with a knife test, then turn off the heat.
In a separate pan, heat vegetable oil and add curry powder and turmeric to fry.
Add two cans of washed chickpeas to the pan and stir.
