Combine 1 pound of chicken, 1/4 cup of grated carrots, 2 tablespoons of minced garlic, 2 tablespoons of finely chopped white onion, 1/4 cup finely chopped spring onions, 2 tablespoons of minced water chestnuts, 1 tablespoon of olive oil, 1 tablespoon of light soy sauce, 1/2 teaspoon of kosher salt, and 1 teaspoon of ground black pepper in a large bowl.
Mix the ingredients until well incorporated using a silicone or wooden spatula.
Refrigerate the mixture for 30 minutes to allow it to firm up.
Prepare the spring roll wrappers by carefully peeling the edge and working your way to the center, then slowly pull it against you until the wrapper separates.
Place the wrappers in a clean damp cloth and cover them to prevent drying out.
Make the egg wash by cracking an egg and mixing it with 2 tablespoons of drinking water, then set aside.
Use a small bag as a piping bag by placing it inside a cup to keep it open, fill it with the chicken mixture, twist the bag to close securely, pinch the tip, and cut a hole for filling.
Place a wrapper on a flat surface and insert a chopstick under it with two inches of room closest to you, then squeeze the filling using the chopstick as a guide.
Roll the wrapper over the filling, gently pulling the chopstick towards you until the wrapper gets tight, then roll it three-quarters of the way and brush the remaining wrappers with egg wash to seal.
Place the finished spring rolls on a parchment paper lined baking sheet and cut them to your desired length, covering them with a damp cloth to prevent drying out.
Heat 2-3 cups of cooking oil over high heat until the temperature is between 300 to 350 degrees Fahrenheit.
Carefully lower the spring rolls into the hot oil and cook for 3-5 minutes on both sides or until golden, tossing them around occasionally.
Transfer the cooked spring rolls onto a paper towel lined sheet to drain excess oil.
Garnish with spring onions and serve warm with steamed rice or dipping sauce.
