1

Start by taking 1 cup of flour and 1 cup of fine semolina in a bowl.

2

Add a pinch of baking soda and a pinch of salt to the mixture.

3

Mix well and gradually add about 3/4 cup of water to form a tight dough.

4

Knead the dough until it's smooth and tight, ensuring that it doesn't become too wet.

5

Cover the dough and let it rest for 20 minutes.

6

Roast 2 tablespoons of cumin, 1 teaspoon of black pepper, and 2 dried red chilies until the cumin is brown.

7

Add 1/2 teaspoon normal salt, 1/2 teaspoon black salt, 1 teaspoon dry ginger powder, 2 teaspoons amchur powder, and 1/2 teaspoon citric acid to the roasted spices and grind them into a fine powder.

8

For the pani, blend 1 bowl of mint leaves, 1 bowl of cilantro, 1 green chili, and a small piece of ginger with some water.

9

Add a pinch of black salt and the ground spice mixture to the blended ingredients.

10

Add some ice and water to the mixture to create the pani.

11

Divide the pani into two bowls, one for spicy and one for sweet, adjusting the spice level as desired.

12

For the sweet pani, add 3-4 tablespoons of tamarind chutney and mix well.

13

Add lemon juice to both types of pani.

14

Prepare the filling by chopping boiled potatoes and mixing them with boiled white peas, black salt, and some chopped cilantro.

15

After resting, knead the dough again and divide it into small balls.

16

Roll each ball into thin circles, ensuring they are about 3-4 mm thick.

17

Heat oil until it is smoking and fry the rolled puris until they puff up and turn golden brown.

18

Remove the puris and drain them on paper towels.

19

Assemble the pani puri by cracking the puris and filling them with the potato and pea mixture, then dipping them in the pani.
