2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup corn starch
1/2 teaspoon iodized salt

1/4 cup white granulated sugar

2 and 1/4 cups buttermilk

Add 2 and 1/2 cups of all-purpose flour to a mixing bowl.

Add 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1/4 cup of corn starch, 1/2 teaspoon of iodized salt, and 1/4 teaspoon of nutmeg to the bowl.

Add 1/4 cup of white granulated sugar and whisk the dry ingredients until well combined.

Add 3 extra-large eggs to the bowl and break up the yolks with a whisk.

Add 1/2 cup of vegetable oil and 2 and 1/4 cups of buttermilk to the bowl.

Add 1 teaspoon of vanilla extract and stir everything until combined using a cooking spoon.

Generously coat the waffle iron with cooking spray and turn it on.

Wait for the green indicator light to come on to know when the waffle iron is ready.

Pour the thick batter into the waffle iron and spread it evenly with a spoon.

Lower the top of the waffle iron and wait for the green indicator light to come on again.

Once the light indicates the waffle is done, optionally let it cook for an additional 10 to 15 seconds before removing it.

Carefully remove the waffle from the iron and place it on a plate.

Repeat the steps until all the batter is used, making up to four large waffles.

Top the waffles with mixed berries, whipped cream, and syrup, or any toppings of your choice.

To keep the waffles crispy, place them in a 200°F oven for up to 20 minutes.
