bacon

🥗Healthier: turkey bacon

💰Cheaper: pork belly

Turkey bacon reduces fat while maintaining flavor.

collard greens

🥗Healthier: spinach

💰Cheaper: kale

Spinach is more accessible and offers similar nutrients.

black beans

🥗Healthier: pinto beans

💰Cheaper: canned beans

Pinto beans are often less expensive and easier to find.

sausage

🥗Healthier: chicken sausage

💰Cheaper: ground beef

Chicken sausage lowers fat content while still being flavorful.

1

Start by taking 500 g of black beans from a 1 kg package and check for stones or debris.

2

Wash the beans under running water.

3

Place the washed beans in a pressure cooker with enough water to cover them by about 2 fingers.

4

Add 1 small onion, cut into quarters, to the pressure cooker.

5

Seal the pressure cooker and bring it to pressure; once it starts making noise, lower the heat and cook for 15 minutes.

6

While the beans are cooking, prepare 4 collard greens leaves by removing the tough stem and slicing them thinly.

7

After 15 minutes, turn off the heat and let the beans rest in the pressure cooker.

8

In a skillet, add 250 g of bacon and cook until it releases its fat and becomes slightly golden, being careful not to overcook it.

9

In the same skillet, add 250 g of sausage and cook for about 2 minutes until browned.

10

Fry 2 bananas in a separate pan until golden brown on both sides.

11

Add 2 cloves of crushed garlic and a pinch of salt to the bacon and sausage mixture and sauté.

12

Add 1 medium chopped onion and a small chili pepper to the skillet and sauté until translucent.

13

Using a slotted spoon, remove the cooked beans from the pressure cooker, leaving the broth behind, and add them to the skillet.

14

Season the mixture with 1 teaspoon of salt and mix well.

15

Add the sliced collard greens to the skillet and stir until wilted, about 2-3 minutes.

16

Add 1 cup of cornmeal to the mixture, adjusting the amount based on your preference for texture (more for drier, less for moister).

17

Mix everything well until combined and serve, garnishing with the remaining fried banana slices.
