Soak 1.5 cups of carioca beans overnight.

Wash the beans thoroughly by massaging them in water, then drain.

Place the beans in a pressure cooker with water up to about 2 fingers above the beans, add 1 bay leaf and a little salt.

Add the bacon to the pressure cooker with the beans.

Cook the beans under pressure for about 6 minutes; if not soaked, cook for 8-10 minutes instead.

Chop 1 large onion into large pieces.

Prepare the collard greens by removing the stems and slicing them into smaller pieces; you should have about 2 cups.
