Upma

1 cup semolina
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 onion, chopped
1 green chili, chopped
1 teaspoon ginger, grated
2 cups water
Salt to taste
Fresh coriander for garnish

Heat 2 tablespoons of oil in a pan over medium heat.

Add 1 teaspoon of mustard seeds and let them splutter.

Add 1 teaspoon of cumin seeds and sauté for a few seconds.

Add 1 chopped onion and sauté until translucent.

Add 1 chopped green chili and 1 teaspoon of grated ginger, and sauté for another minute.

Add 1 cup of semolina and roast it for about 3-4 minutes until it turns golden brown.

Pour in 2 cups of water and add salt to taste.

Stir well and bring to a boil, then reduce the heat to low.

Cover the pan and let it cook for about 5 minutes until the water is absorbed and the semolina is cooked.

Fluff the upma with a fork and garnish with fresh coriander.
