1 cup whole jowar grains (sorghum), parboiled as per the packet
1/4 cup raw peanuts
2 1/2 cups water
1 tablespoon oil or ghee
1 teaspoon mustard seeds
1/2 teaspoon jeera(cumin seeds)
1 tsp urad dal(black gram)
1/4 teaspoon asafoetida(hing)
2-3 green chilies, finely chopped
1-inch piece of ginger, grated
1 sprig curry leaves
1 onion, medium, finely chopped
1 small carrot, finely chopped (about 1/4 cup)
1 small capsicum (bell pepper), finely chopped (about 1/4 cup)
1/4 teaspoon turmeric powder
Salt to taste
Few chopped Fresh cilantro leaves
1/4 cup fresh grated coconut
1-2 tsp Lemon juice

Soak the parboiled jowar in water as per packet instructions, then drain.

Heat oil or ghee in a pan and add mustard seeds until they splutter.

Add cumin seeds, urad dal, green chilies, ginger, and onion; sauté until onion is translucent.

Stir in curry leaves, carrot, and capsicum; cook until vegetables are tender.

Add turmeric powder and salt; mix well.

Pour in water and bring to a boil.

Add soaked jowar and stir; cover and cook until jowar is fluffy.

Fluff the upma with a fork and add lemon juice and chopped cilantro before serving.
