Vegetable Upma

3 tablespoons oil
1 tablespoon ghee
10-12 cashews
1 teaspoon mustard seed
1 tablespoon urad dal
1 tablespoon roasted chana dal
2 green chillies
1 teaspoon ginger
12-14 curry leaves
1 cup onion
¼ cup french beans
¼ cup carrots
1 cup semolina/rava/suji (medium size)
salt to taste
3.5 cups water
1 tablespoon sugar
2 tablespoons ghee
1 tablespoon fresh coriander (finely chopped)

Heat oil in a pan over medium heat.

Add mustard seeds and let them splutter.

Add urad dal, chana dal, and cumin seeds; sauté until golden brown.

Add chopped onions and green chili; sauté until onions are translucent.

Stir in the chopped carrot and green peas; cook for 2-3 minutes.

Add turmeric powder and salt; mix well.

Pour in the water and bring to a boil.

Gradually add the semolina while stirring continuously to avoid lumps.

Cook for 3-4 minutes until the semolina absorbs the water and becomes fluffy.

Remove from heat and let it sit covered for a few minutes.

Fluff the upma with a fork and garnish with fresh coriander leaves before serving.
