1 cup coarse sooji
2 tablespoons oil
1/2 teaspoon cumin seeds
1/2 teaspoon black mustard seeds
1 dry red chilli
few curry leaves
little less than a cup of chopped onions
1/2 teaspoon finely chopped ginger
1 chopped green chilli
1/3 cup thawed out frozen veggies
1/2 teaspoon curry powder
1 teaspoon salt
1 teaspoon sugar
2 cups water
1 teaspoon ghee
1 teaspoon fresh lemon juice
1 tablespoon finely chopped coriander leaves

Heat oil in a pan and add cumin seeds, black mustard seeds, and dry red chilli. Cook until they start to splutter.

Add curry leaves, chopped onions, and ginger. Sauté until onions are translucent.

Add chopped green chilli and thawed frozen veggies. Cook until the veggies are tender.

Stir in the coarse sooji and roast for a few minutes until it turns light golden.

Add water, salt, sugar, and curry powder (if using). Stir well and bring to a boil.

Reduce heat, cover, and let it cook until the water is absorbed and the sooji is fluffy.

Add ghee, lemon juice, and coriander leaves before serving.
