3.5 pounds goat meat
1 medium tomato
2 green onions
1 scotch bonnet pepper
4 cloves garlic
1 cup water
2 pinches cloves
1 teaspoon paprika
1/4 teaspoon baking soda
2 tablespoons tomato paste
1/2 cup water
1/2 large onion
1 tablespoon butter

Heat 3 tablespoons of virgin olive oil in a pot.

Add 3.5 pounds of cleaned and seasoned goat meat.

Add a little water to the bowl to get all the seasoning out and pour it into the pot.

Spread parsley and thyme over the meat.

Add 2 finely chopped green onions and 1 medium tomato cut into small chunks.

Add 1 whole scotch bonnet pepper and 4 crushed garlic cloves.

Add 1/2 cup of water, not too much to start with.

Sprinkle 1 teaspoon of complete seasoning, 2 pinches of cloves, 1 teaspoon of paprika, and 1/4 teaspoon of baking soda over the meat.

Cover the pot and cook on low heat (number 3) for 45 minutes.

After 45 minutes, check the liquid formed by the meat.

Add 1 cup of water gradually to the pot.

Fry 2 tablespoons of tomato paste in a bit of oil, then add a little water to loosen it up before adding to the pot.

Let it cook for 20 minutes.

Add chopped bell peppers and 1/4 of a large onion, then add another 1/2 cup of water if needed.

Add 1 tablespoon of butter and taste to adjust seasoning as necessary.

Increase heat to medium and cook for an additional 30 minutes until the meat is tender.
