Add the wet mixture to the dry ingredients, stirring until just combined.
Fold in the chopped shrimp and parsley until evenly distributed.
Heat oil in a deep fryer or heavy pot to 350°F (175°C).
Using a spoon, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot.
Fry until golden brown, about 3-4 minutes, turning occasionally for even cooking.
Remove fritters with a slotted spoon and drain on paper towels.
Serve hot with a dipping sauce of your choice.
