Eggs in a Nest

Cultural Context

Eggs in a Nest, also known as Eggs in a Basket or Toad in the Hole, is a classic American breakfast dish that combines the simplicity of eggs and toast. Traditionally enjoyed for breakfast or brunch, this dish brings together the comforting flavors of crispy bread and runny eggs. Variations exist worldwide, with different types of bread and toppings, but the essence remains the same: a warm, satisfying start to the day.

Nutritional yeast is lower in fat and adds flavor.

1

Start by baking bread: Combine 100 milliliters of water at 110 degrees Fahrenheit with a packet of instant yeast and half of 650 grams of all-purpose flour, along with 50 grams of sugar, 5 grams of salt, and 45 grams of unsalted butter at room temperature.

2

Stir to combine, then add the remaining 300 milliliters of water and stir again to form a pancake-batter-like paste.

3

Add the remaining flour and stir until a shaggy dough forms.

4

Turn the dough out onto a countertop and knead for 7 to 9 minutes until smooth and supple.

5

Oil a large bowl, place the dough inside, and roll it around to coat in oil. Cover with plastic wrap and let sit at room temperature for 45 minutes to 1 hour, or until doubled in size.

6

Turn the dough out onto a lightly floured countertop, punch it down, and form it into a loaf by tucking it under itself for a round top.

7

Place the loaf in a buttered and parchment-lined loaf pan, cover loosely with plastic wrap, and let it rise for another hour until redoubled in size.

8

Brush the loaf with melted butter and bake in a 400 degree Fahrenheit oven for 25 to 35 minutes until it reaches 200 degrees Fahrenheit internally. Brush with melted butter again and let cool until morning.

9

Slice a thick piece of the baked bread for the nest.

10

Cut a hole in the center of the bread slice to preserve the centerpiece for yolk mopping.

11

Melt 1.5 tablespoons (45 grams) of butter in a stainless steel skillet and coat both sides of the bread with the melted butter.

12

Place the bread in the skillet and toast for about 2 minutes on medium-low heat.

13

Add a dollop of bacon fat in the center of the bread, then crack an egg inside.

14

Increase the heat to medium-high and cook for about 1 minute, then flip the bread and toast for an additional 10 to 15 seconds.

15

Season with kosher salt and black pepper.
