2 shallots
1 tablespoon fresh thyme
2 tablespoons parsley
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup gruyere cheese
4 slices bread
1 tablespoon olive oil
1/4 cup parmesan cheese
