Feta Fried Eggs on Greek Fries

Thickly cut the potatoes into sticks, larger than 1cm width, and place them in a bowl. Pour 2 tbsp of oil on them, sprinkle with oregano, and season with salt and half the pepper, then toss to coat.

Add the fries into the basket of an air fryer and fry for 25 minutes at 190°C. After 15 minutes, open the air fryer, flip the fries over, and continue cooking until golden and crispy. Once ready, transfer to a serving dish.

In a medium nonstick pan over medium/low heat, pour the remaining 1 tbsp of oil. Crumble the feta into the pan and spread it out. When it starts sizzling and browning, crack the eggs on top of the feta. Sprinkle with chili flakes and coriander, and season with the remaining pepper. Cook until the feta is deeply brown and crispy, and the eggs are cooked through with runny yolks.

Remove from the pan and place over the fries. Squeeze a quarter of a lime on top and enjoy while dipping the fries in the egg yolks.
