Prepare two grouper fillets weighing about 120 g each.
Season the fillets on both sides with pepper salt seasoning.
Slice one ripe plantain diagonally into half-inch slices.
Dice one cup of sweet potatoes and grill them.
Prepare two red bell pepper rings and two green bell pepper rings.
Dice half of a large onion.
Cut one cup of cherry tomatoes in half.
Make a sour orange mixture with the juice of one lime, one lemon, and half of a navel orange, and add one teaspoon of Caribbean pepper sauce.
Place a large sheet of foil down with a sheet of parchment paper on top.
Lay four slices of plantain as a bed for the fish on the parchment paper.
Add bell pepper rings and diced onions on top of the fish.
Position grilled sweet potatoes and halved cherry tomatoes around the fish.
Bring the parchment and foil paper up into a pocket and spoon in the sour orange juices and thyme sprigs.
Cover the parchment and foil tightly to make a purse.
Grill the packet on a 400°F grill for approximately 30 minutes until the fish is light and flaky and the vegetables are bright and al dente.
