1/2 cup chickpeas (soaked overnight)
3-4 cloves garlic
1/4 cup olive oil
1 cup boiled chickpeas
1/4 cup tahini
1 teaspoon paprika (Kashmiri red chili powder)
salt to taste
water (from boiling chickpeas)

Soak 1/2 cup chickpeas overnight in water with a little baking soda.

Drain and rinse the chickpeas 2-3 times, then boil them until tender.

In a 12-inch skillet, heat olive oil and roast 3-4 cloves of garlic until lightly browned.

Remove the roasted garlic from heat and let it cool.

In a blender, add the boiled chickpeas and some of the reserved boiling water.

Add the cooled roasted garlic and olive oil to the blender.

Add 1/4 cup tahini and blend until smooth, adding more water if necessary.

Season with salt and blend again until well combined.

Transfer the hummus to a serving dish and drizzle with olive oil on top.

Garnish with paprika and serve with toasted bread.
