3 large eggs
3/4 cup coconut milk
1 tablespoon fresh lime juice and zest
1 teaspoon coconut extract
2 cups all-purpose flour
2 teaspoons baking powder

4 ounce unsalted butter , softened
3/4 cup granulated sugar
1/4 cup sifted powdered sugar
1 teaspoon lime juice
1 teaspoon water

Preheat your oven to 350°F (175°C).

In a mixing bowl, combine the shredded coconut, eggs, coconut milk, lime juice and zest, and coconut extract.

In another bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
