Preheat the oven to 250°F.
In a large bowl, pour in the egg and add brown sugar, mixing until dissolved.
Dissolve coconut milk powder in water and add mixed spice and cinnamon powder, mixing until dissolved.
Add vanilla flavoring to the mixture.
Combine the dissolved coconut milk mixture with the egg mixture.
Cut 6-7 slices of bread into small pieces and crush them by hand.
Spray the baking dish with palm spray.
Combine the bread pieces with the mixture, ensuring all bread is coated.
Let the bread sit in the mixture for 1-2 minutes to soak up the liquid.
Transfer the mixture to the baking dish and bake for 30-35 minutes.
Allow the bread pudding to cool before cutting and serving with a vanilla cinnamon topping.
