Preheat the oven to 350°F (175°C).
Mix the yeast and sugar in warm coconut milk until dissolved.
Let the mixture sit for 5-10 minutes until frothy.
In a large bowl, combine flour and salt.
Add the yeast mixture, eggs, and melted butter to the flour.
Mix until a dough forms, then knead for 5-7 minutes until smooth.
Incorporate shredded coconut into the dough.
Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
Punch down the dough and shape it into a loaf.
Place the loaf in a greased baking pan and let it rise for another 30 minutes.
Bake in the preheated oven for 30-35 minutes until golden brown.
Remove from the oven and let cool before slicing.
