4.5 tablespoons olive oil
200 g desiccated coconut
400 ml warm water
1 tablespoon yeast
1 teaspoon vanilla flavour

Mix the yeast, warm water, and 100 g of flour together and allow to prove for 10 minutes.

Add the remaining 400 g of flour and the rest of the dry ingredients. Keep mixing until a non-sticky ball of dough is formed.

Knead the dough with little flour for about 10 minutes until very smooth and elastic.

Transfer to an oiled bowl, cover with cling film, and allow to prove for at least 40 minutes until it doubles in size.

Knead the dough again and divide the dough. Make oval shapes and transfer into a buttered bread pan. Make small balls and transfer onto a baking tray lined with baking paper. Allow to prove again until it doubles in size.

Glaze with egg wash and bake in the oven at 180 degrees centigrade for 25 to 30 minutes until nice and golden.
