1 teaspoon mustard seeds
1/2 teaspoon fenugreek seeds
2 green chilies
10 curry leaves
1 tablespoon chopped ginger
1 tablespoon chopped garlic
1 medium sliced onion
1 teaspoon turmeric
1 teaspoon red chili powder
1 teaspoon salt
2 medium tomatoes
1/2 teaspoon black pepper powder
1 can (13.5 oz) coconut milk
2 tablespoons tamarind water

Heat a pan and add Coconut Oil.

Add Dry Red Chilli, Mustard seeds, Fenugreek seeds, Green Chilli, Curry leaves, Chopped Ginger, Chopped Garlic, and Sliced Onions.

Stir nicely without browning the onions, just a light sauté.

Add Turmeric, Red Chilli powder, Coriander powder, and a little bit of Salt; stir quickly.

Add Tomatoes and a little Black Pepper powder; stir again and cook the tomatoes until they wilt.

Add a little dash of water and very little Coconut Milk; boil for at least 5 minutes.

After boiling, add a lot of Coconut Milk and stir well.

Bring to a quick boil, then add Tamarind water; stir.

Boil once more briefly, then remove from heat.
