Hummus

Cultural Context

Hummus has its roots in the Levant region, particularly Lebanon, where it is a staple in many households. Traditionally served as a mezze, it brings people together, often enjoyed with pita bread or fresh vegetables. Today, hummus has gained international popularity, with countless variations and flavors appearing worldwide.

LBLBside
6 servings
Servings4
dried chickpeas (garbanzo beans)
3 cups water
tahini
fresh lemon juice
2 garlic cloves
extra virgin olive oil
cumin seeds
salt
paprika
finely chopped parsley or coriander leaves
1

Cook the dried chickpeas in the instant pot for 35 minutes with 3 cups of water without soaking them.

2

Drain the cooked chickpeas and save the water (aquafaba).

3

Remove the skins from the chickpeas for extra creaminess (optional).

4

In a high-speed blender or food processor, add the drained chickpeas.

5

Add homemade tahini to the blender.

6

Add fresh lemon juice (avoid bottled if possible).

7

Add aquafaba (or water if you didn't save the drained water).

8

Add 2 garlic cloves (or more for extra garlic flavor, or omit for Jain hummus).

9

Add extra virgin olive oil.

10

Add cumin seeds (or roasted cumin seed powder).

11

Add salt to taste.

12

Blend the mixture starting at a low speed, then increase to high speed until desired smoothness is reached (about 1-2 minutes).

13

If the mixture is too thick, add more water or aquafaba to help blend.

14

Once blended, the hummus should have a creamy texture.

15

Store the hummus in the refrigerator for 3-5 days or freeze for up to 6 months (defrost in the fridge, not the microwave).

16

When serving, create a well in the hummus, drizzle with extra virgin olive oil, sprinkle with salt and paprika, and garnish with chopped parsley or coriander leaves.

17

Serve with veggies, falafel, chips, or as desired.
