Heat coconut oil in a large pot over medium heat until shimmering.
Add mustard seeds and cook until they start to pop, about 1-2 minutes.
Stir in sliced onions, garlic, and ginger; sauté until onions are golden brown, about 5-7 minutes.
Add green chilies and curry leaves; cook for another minute until fragrant.
Mix in coriander powder, turmeric powder, red chili powder, and black pepper; cook for 1-2 minutes to toast the spices.
Add cubed beef and salt; stir well to coat the meat in the spice mixture.
Pour in chopped tomatoes and cook until they break down, about 5 minutes.
Cover and simmer on low heat for 1.5-2 hours, stirring occasionally, until beef is tender.
Once tender, add coconut milk and lime juice; stir to combine and heat through for 5 minutes.
Adjust seasoning with salt and lime juice as needed before serving.
