Wash and soak 4 kg of basmati rice for 1 hour.

Add whole spices (2 star anise, 10-12 cloves, 5-6 pieces of cinnamon, 5 grams of big cardamom) to the hot ghee to release their aroma.

Slice and prepare 2 kg of red onions, then add them to the pot and sauté until they turn brown, being careful not to burn them.

Add 4 tablespoons of ginger garlic paste to the browned onions and sauté lightly.

Add 5 kg of lamb to the pot and stir to brown the meat slightly.

Add 1 kg of yogurt directly to the pot without beating it, and mix well.

Cook the mixture for 2-4 minutes to combine the flavors.

Grind 1.5 kg of tomatoes and 12-15 green chilies together with a little water until coarsely blended.

Add the tomato and chili mixture to the pot, stir, and cook for about 8-10 minutes until it comes to a boil.
