80 g sugar

500 g ricotta
1 heaping tablespoon Greek yogurt
160 g wheat flour
1.5 heaped teaspoons baking powder

Add 80 g sugar to a mixing bowl.

Crack 4 eggs into the bowl with the sugar.

Using a hand mixer, mix the sugar and eggs until the sugar dissolves, without over-beating.

Add 500 g of ricotta to the mixture.

Add 1 heaping tablespoon of Greek yogurt to the ricotta.

Optionally, add zest of a lemon or orange if desired.

Combine all the ingredients with the hand mixer until well mixed.

Sift 160 g of wheat flour and 1.5 heaped teaspoons of baking powder into the mixture to make it fluffy.

Mix the sifted flour and baking powder into the wet ingredients using a whisk until combined.

Plug in the waffle maker to heat it up.

Brush a little oil on the waffle maker to prevent sticking.

Use a tablespoon to scoop a heaped portion of dough and place it in the center of the waffle maker.

Close the waffle maker and cook for 5 to 6 minutes until the waffles are ready.

Carefully remove the waffles with a fork and repeat the process for the next batch, brushing oil again before adding more dough.
