Mix together 1 and 3/4 cups of all-purpose flour, 2 teaspoons of baking powder, 3 teaspoons of sugar, and 1/2 teaspoon of salt thoroughly.

Add 3 egg yolks, 1/3 cup of vegetable oil, 1 teaspoon of vanilla, and 1 and 1/2 cups of milk to the dry ingredients and mix thoroughly.

In a separate bowl, beat 3 egg whites until stiff.

Fold the egg whites into the waffle mixture about a third at a time, being careful not to over mix.

Lightly spray a hot waffle iron with cooking spray.

Add about 1/4 cup of the waffle mix to the waffle iron and bake.

When the waffle is done, the green light will come on; carefully remove the waffle from the waffle iron.
