Instructions

  1. 1In a bowl, whisk the eggs with salt and black pepper until well combined.
  2. 2Heat a non-stick skillet over medium heat and add the butter, allowing it to melt and coat the pan.
  3. 3Add the diced onions and bell peppers to the skillet, sautéing until they are soft, about 3-4 minutes.
  4. 4Add the chopped corned beef to the skillet, stirring to combine with the vegetables, and cook for an additional 2 minutes.
  5. 5Pour the whisked eggs over the corned beef and vegetables, tilting the pan to ensure even coverage.
