1 large carrot, cut into florets
1 head garlic, peeled and pounded
¼ cup green olives, pitted
¼ cup pickled gherkins, sliced thinly
4 pcs Thai chili peppers
1 tablespoon peppercorns
2 cups olive oil or corn oil

Clean, gut, and remove the tail of the tamban.

In a large bowl, combine 7 cups of water and ¾ cup of rock salt, stirring until the salt dissolves. Add tamban and soak in brine solution for about 30 minutes. Drain and rinse well.

In a pressure cooker, arrange bay leaves, carrot, and garlic at the bottom. Add tamban in a single layer. Add green olives, pickled gherkins, Thai chili peppers, peppercorns, 1 tablespoon rock salt, olive oil or corn oil, and enough water to cover the fish.

Cover and cook over medium heat until the cooker whistles. Lower the heat and cook for 1 hour and 10 minutes.

Turn off the heat and release pressure. Carefully remove the lid. Allow to cool.
