1/2 cup Spanish short grain rice (95 grams)
2 cans sardines in olive oil (4 1/2 oz each, 120 grams each)
3 tbsp olive oil from canned sardines (45 ml)
1 medium-sized onion
1 tbsp sherry vinegar (15 ml)
1/2 tsp sweet smoked Spanish paprika (1.25 grams)
1/4 tsp crushed red pepper (a little over 0.5 grams)
15 oz can tomato sauce (425 g)
2 tbsp vegetable broth (30 ml)
sea salt
freshly cracked black pepper
2 tbsp chopped chives (5 g)
chopped parsley

Heat a saucepan over medium heat and add 2 tbsp of extra virgin olive oil.

Thinly slice 6 cloves of garlic.

Drain 2 cans of sardines in olive oil into a fine sieve with a bowl underneath.

Heat a large fry pan over medium heat and add 3 tbsp of olive oil from the canned sardines.

Finely chop 1 medium-sized onion and roughly chop 4 cloves of garlic, then add them to the hot fry pan, mixing continuously.

Sauté the onion and garlic for about 4 minutes until lightly sautéed.

Add 1 tbsp of sherry vinegar, 1/2 tsp of sweet smoked Spanish paprika, and 1/4 tsp of crushed red pepper to the pan and mix.

Add a 15 oz can of tomato sauce and 2 tbsp of vegetable broth to the pan, seasoning with sea salt and freshly cracked black pepper; mix well.

Gently add the sardines over the tomato sauce in a single layer and flip them to coat in the sauce.

Lower the heat to low and let the sardines simmer.

After 18 minutes, remove the saucepan with rice from heat and add 2 tbsp of chopped chives; fluff the rice with a fork.

To assemble, add some garlic rice to a serving plate, then add the simmering tomato sauce with sardines next to the rice, and top with chopped parsley.
