Spanish-style Sardines

Today, they are enjoyed worldwide, with variations that include different marinades and cooking methods, but the essence of fresh, grilled fish remains a favorite.

Remove the scales from the herring fish using your thumbnail, being careful not to damage the exterior.
Cut off the head of the fish and remove the innards, ensuring the fish is clean.
Prepare the pressure cooker with a steam basket for cooking the fish.
Add half of the garlic cloves (12 cloves total) to the steam basket, keeping the skins on to prevent them from burning.
Line up the herring fish in the steam basket with the belly facing up to maintain its shape during cooking.
Sprinkle 1 tablespoon of Spanish paprika over the fish.
Add 1/2 cup of crinkle cut carrots to the steam basket.
Add 6 red chili peppers to the steam basket.
Pour 1 tablespoon of fish sauce over the ingredients in the steam basket.
Add 1 teaspoon of salt to the steam basket, noting that the fish sauce already adds saltiness.
Seal the pressure cooker and cook on the cooktop for 45 minutes to 1 hour.
Once cooking is complete, submerge the pressure cooker in the sink to quickly release the pressure.
Carefully remove the lid from the pressure cooker to reveal the cooked sardines.
