Salmon Patties with Aioli

Drain and wash the canned salmon in water and vinegar.
In a bowl, mix the salmon, chopped bell peppers, celery, garlic, parsley, scallion, onion, egg, and seasonings until combined.
Add the bread or breadcrumbs to the mixture and mix well.
Form the mixture into patties.
Heat oil in a skillet over medium heat until shimmering.
Add the patties to the skillet and cook until golden brown, about 4-5 minutes per side.
Remove the patties from the skillet and drain on paper towels.
For the aioli, combine mayonnaise, sour cream, vegetable seasoning, lemon juice, and parsley in a bowl.
Mix the aioli until smooth and creamy, adjusting seasoning as needed.
Serve the salmon patties warm with aioli on the side.
