6 pouches (2.5 ounces each) skinless, boneless pink salmon
½ cup panko bread crumbs
½ cup finely chopped fresh red sweet pepper
½ cup finely chopped green onions
1 tablespoon capers, roughly chopped
1 egg, lightly beaten
½ cup mayonnaise
1 tablespoon yellow mustard
Nonstick cooking spray
3 tablespoons finely chopped fresh dill
1 tablespoon lemon juice
1 teaspoon bottled hot pepper sauce

In a medium bowl combine salmon, bread crumbs, red pepper, green onions, capers, egg, 2 tablespoons of the mayonnaise, and the mustard. Shape into patties.

Coat a very large nonstick skillet with nonstick cooking spray and heat over medium heat. Add patties and cook for 5 minutes per side or until browned and cooked through.

For Dill Mayo: In a small bowl stir together the remaining mayonnaise, dill, lemon juice, and hot sauce. Serve patties with dill mayo.
