Tomato Sauce

Cultural Context

Tomato sauce has roots in Italian cuisine, where it is a staple for pasta dishes and pizzas. Its simplicity and versatility have made it a beloved condiment worldwide, often used in various dishes beyond Italian cuisine. Today, many variations exist, including spicy arrabbiata and creamy vodka sauce, reflecting local tastes and ingredients.

1/2 cup grated parmesan
3 cloves fresh garlic
28 oz canned tomatoes
1/4 cup fresh basil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
2 tablespoons extra virgin olive oil
8 oz rigatoni pasta

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

Put a pot of water on the stove to boil for the pasta.

2

Cut the tomatoes in half to help them release their juices.

3

Tear the fresh basil into small pieces by hand at the end to avoid bruising.

4

Heat the pan and add olive oil.

5

Once the pasta water is boiling, salt it and add the pasta, cooking for 9 minutes for al dente.

6

Add the tomatoes to the olive oil in the pan and season with salt.

7

Smash the tomatoes to help release their juices.

8

If the sauce looks dry, add a little pasta water to thin it down.

9

Optionally, sauté garlic in the oil before adding tomatoes for 30 seconds, or add it after the tomatoes to avoid bitterness.

10

Let the sauce simmer for 8 to 9 minutes until the pasta is al dente.

11

Transfer the al dente pasta to the sauce, reserving some pasta water if drained.

12

Let the pasta cook in the sauce for another minute or two to absorb flavors.

13

Tear and add fresh basil and mix in some freshly grated parmesan, reserving some for topping.
