500 grams ripe tomatoes
small piece of onion
1 teaspoon garlic paste
1 teaspoon ginger paste
half a teaspoon salt
3 tablespoons sugar
1 teaspoon chili powder
1 teaspoon vinegar

Remove the stem from the tomatoes and cut them into long pieces.

Transfer the tomatoes into a pan along with a small piece of onion, 1 teaspoon garlic paste, 1 teaspoon ginger paste, and half a teaspoon of salt.

Mix the ingredients well, cover, and cook on low flame for 15 minutes.

After 15 minutes, turn off the flame and let it cool down.

Once cooled, transfer the mixture into a blender jar and blend until smooth.

Strain the blended mixture into a pan.

Add 3 tablespoons of sugar and 1 teaspoon of chili powder (or 2 teaspoons for spicier sauce).

Add half a teaspoon of salt and cook on low flame for 10 minutes until the sauce thickens, stirring occasionally.

Add 1 teaspoon of vinegar (or lime juice) and turn off the stove.

Let the sauce cool down and transfer it into a dry and clean container.
