In a medium saucepan over medium heat, melt a couple tablespoons of butter.
Add shallots and sauté for 1 ½ to 2 minutes or until softened.
Pour in white wine and let it simmer until the liquid is almost gone, stirring often (about 5 to 6 minutes).
Add demi-glace to the mixture.
Increase the heat to medium-high and bring the mixture to a simmer.
Once simmering, start a timer for 15 minutes and reduce heat to maintain a steady simmer between medium and medium-low.
After 15 minutes, add some Dijon mustard and whisk constantly until well blended (about 1 minute).
Add freshly ground black pepper, stir once again, and taste to adjust if necessary.
