Cornstarch is gluten-free and can thicken sauces effectively.
Preheat a saucepan over low to medium heat.
Add 3 tablespoons of butter to the saucepan and stir until melted.
Add 3 tablespoons of all-purpose flour to the melted butter and mix until there are no solid chunks.
If the mixture seems too dry, add a small chunk of butter to help it combine.
Pour in 1 cup of red wine and stir for 2-3 minutes until the texture becomes creamy and the alcohol taste diminishes.
Add 2 to 4 cups of beef, chicken, or vegetable stock to the mixture and stir continuously for 3-5 minutes until creamy.
Add 1 tablespoon of salt and 1 tablespoon of black pepper to the mixture and stir for another 3 minutes.
Taste test the gravy and adjust seasoning if necessary.
