German Hunter Sauce

It reflects the rustic cooking style of hunters who would use local ingredients to create hearty, flavorful sauces. Today, it is enjoyed in various forms across Germany and beyond, often adapted to suit modern tastes and available ingredients.

Grape juice offers a non-alcoholic option while white wine is often less expensive.
Heat the oil in the pan, then add the onion and bacon and fry for a couple of minutes.
Add the mushrooms and fry for a few minutes, then stir in the tomato paste and roast it lightly with the mushrooms.
Pour in the red wine and cook until the wine has evaporated.
Put in the cream and chicken broth and cook for about 10 minutes.
Season with Worcestershire sauce, soy sauce, and some salt & pepper.
Bind the sauce by mixing the starch with some cold water. While stirring, carefully add the starch to the sauce until it thickens to the right consistency.
