Classic Au Jus
Cultural Context
Au Jus, meaning 'with juice' in French, is a traditional accompaniment to roast beef in American cuisine. It enhances the flavor of the meat and adds moisture, making it a staple in many family meals and gatherings. While often served with prime rib or French dip sandwiches, variations exist globally, adapting to local tastes and available ingredients.

Chicken broth is often less expensive and can be used in a pinch.
Pour the drippings from your roasting pan into a ramekin, making sure to scrape up any brown bits.
Remove excess fat if necessary.
Add the drippings, wine, beef stock, and thyme to a medium saucepan.
Bring the contents to a boil, then simmer for 15 minutes.
Remove the thyme sprigs and season with salt and pepper to taste.
