3 cups beef stock (750 mL)
2-3 bay leaves

Place a highsided saucepan over medium to medium-high heat.

Let the mixture cook for around 1 minute to reduce the wine and remove the alcohol.

Add 3 cups of beef stock to the saucepan and bring the mixture to a simmer.

Add 2-3 bay leaves, a handful of fresh thyme or 1/2 teaspoon of powdered thyme, and 1/2 teaspoon of black pepper to the mixture.

Reduce the gravy for roughly 10 minutes, skimming off impurities and scum from the top.

Transfer the gravy to a new saucepan through a fine sieve, tapping it to ensure all liquid passes through.
