Roasted New Zealand Lamb

New Zealand lamb leg

Preheat the oven to 180°C (350°F).
Season the lamb leg generously with salt and black pepper.
Rub minced garlic, chopped rosemary, and thyme all over the lamb.
Drizzle olive oil over the lamb and massage the herbs into the meat.
Place the lamb in a roasting pan and surround it with quartered onions, carrots, and potatoes.
Squeeze lemon juice over the vegetables and lamb.
Roast in the preheated oven for about 1.5 hours or until the internal temperature reaches 60°C (140°F) for medium-rare.
Baste the lamb with pan juices every 30 minutes for even cooking.
Once cooked, remove the lamb from the oven and let it rest for 15 minutes before carving.
Serve the lamb with the roasted vegetables and any remaining juices.
