Soak the sweet potato noodles in warm water for about 30 minutes until softened, then drain and set aside.

In a pan, heat 1 tablespoon of sesame oil over medium heat. Add the cubed tofu and fry until golden brown on all sides. Remove and set aside.

In the same pan, add the minced garlic and sliced onion. Sauté until the onion is translucent.

Add the julienned carrot and sliced bell pepper to the pan. Stir-fry for about 3-4 minutes until they are slightly tender.

Add the blanched spinach and cooked sweet potato noodles to the pan. Mix well.
