1

Wash long grain rice thoroughly and drain until dry.

2

Add vegetable oil and butter to a pot over medium heat.

3

When the butter has melted, add whole spices: cardamom, cinnamon, and bay leaves; sauté for a couple of minutes.

4

Add dried rice and mix to coat in butter, frying for a couple of minutes until it smells toasty.

5

Add salt, black pepper, bajaar spice, and freshly grated nutmeg; mix well.

6

Pour in enough chicken stock to completely submerge the rice by about 1.5 cm.

7

Bring the pot to a boil for 2-3 minutes, then reduce heat to low and cover, cooking for 20 minutes.

8

In a separate heavy-bottomed pan, add butter or oil and minced lamb or beef over medium-high heat; press into the base of the pan to brown.

9

Flip sections of the meat to brown on the underside, then use a potato masher to break it into smaller pieces.

10

Add chopped onion and crushed garlic, season with salt, black pepper, bajaar spice, and ground cardamom; mix well.

11

Continue to cook until the liquid evaporates, then add small amounts of water to deglaze the pan.

12

Add frozen sweet peas and cook until just cooked through, then mix in a little nutmeg.

13

In the same pan, add oil and butter, then diced lamb or beef cubes; season and cover to steam until cooked through.

14

Check on the rice, fluff with a fork, and mix in the meat and vegetable mixture.

15

Fry blanched almonds in oil for 3-4 minutes until golden, then drain and salt them.

16

Mix fried almonds into the rice and serve with any meat topping.
