500-600 gm lamb shoulder cuts
2 Tbsp olive oil
2 Tbsp butter
2 1/2 tsp salt
2 tsp black pepper
1 1/2 tsp cardamom
4-5 pods garlic
1 large whole onion
8 cups water
2 cups washed and soaked rice (300 gm)
1 small onion finely chopped
2-3 garlic pods finely chopped
1 tsp ginger garlic paste
1 tsp cinnamon powder
2-3 whole cardamoms
1 Tbsp olive oil
2 garlic pods finely chopped
1 cup Jameed concentrate
1 cup plain yogurt
1/2 cup sour cream
1 glass stock
flat bread
almond slivers
coriander
parsley

Prepare mutton stock by heating 2 Tbsp olive oil or butter in a pot, then add lamb shoulder cuts, salt, black pepper, cardamom, garlic, onion, and water. Simmer to create a stock.

Prepare rice by heating 2 Tbsp olive oil in a pan, then add chopped onion, garlic, ginger garlic paste, cinnamon, cardamom, and black pepper. Add soaked rice and 4 glasses of mutton stock, then cook until rice is done.

Prepare yogurt sauce by heating 1 Tbsp olive oil in a pan, then add chopped garlic. Mix in Jameed concentrate, plain yogurt, sour cream, and 1 glass of stock, stirring until combined.
