Mansaf

2 mutton legs
4 onions

7-8 cardamom pods
1 stick cinnamon
1 tablespoon cumin

2 tablespoons desi ghee
3 cups basmati rice
2 tablespoons cornflour
2 tablespoons water

Boil 4 cups of water in a pot.

Add 2 mutton legs and 4 chopped onions to the boiling water.

Include 2 tablespoons of whole coriander, 7-8 cardamom pods, 1 stick of cinnamon, and 1 tablespoon of cumin.

Add salt to taste and let it cook until the mutton is tender.

In a separate pot, heat 2 tablespoons of desi ghee.

Add 3 cups of basmati rice and mix well.

Pour in the cooked mutton broth and bring to a boil.

Seal the pressure cooker and cook for 30 minutes.

Prepare a thick paste by mixing 2 tablespoons of cornflour with 2 tablespoons of water, then add to the mutton mixture to thicken it.

Layer flatbread on a serving platter, followed by the cooked rice, then the mutton, and finally top with fried onions and cashews.
