Start with 600 ml of lukewarm water and add 20 grams of dried yeast and 50 grams of sugar. Whisk together and let sit to activate the yeast.

After the yeast is activated, add 1 kilogram of flour and mix until combined.

Add salt to the dough and knead for about 7-10 minutes until smooth.

Let the dough rise in a bowl covered with a damp cloth for about 1.5 hours.

Prepare the filling by chopping 1 red onion, 4 cloves of garlic, and mixing in fresh dill, parsley, and cilantro.

Toast cumin and coriander seeds in a pan, then grind them into a fine powder.

Add the ground spices to the onion mixture along with 1 kilogram of lamb mince, a handful of unsalted pistachios, extra virgin olive oil, and black pepper. Mix well without overworking the meat.

Prepare a pickling liquid with 250 ml white vinegar, 250 ml water, 85 grams sugar, and 25 grams salt. Heat until dissolved.

Finely slice onions and pour the pickling liquid over them. Let sit for at least 24 hours in the fridge.

Make a tzatziki sauce with 2 cucumbers.
