Cayenne and paprika can mimic the heat and flavor profile.

Heat vegetable oil in a large pot over medium heat until shimmering

Add chopped onions and sauté until translucent, about 5-7 minutes

Stir in minced garlic and ginger, cooking for 1-2 minutes until fragrant

Add diced tomatoes and green chili peppers, cooking until softened, about 4-5 minutes

Mix in berbere spice and salt, stirring to coat the vegetables

Add goat meat, browning on all sides for about 8-10 minutes

Pour in enough water to cover the meat, bring to a boil

Reduce heat to low and simmer, covered, for 1.5-2 hours until meat is tender

In the last 30 minutes, add chopped carrots and potatoes

Adjust seasoning if necessary, and stir in chopped coriander and parsley before serving

Serve hot with injera or rice
