2 kg lamb meat (cut into big pieces)
half cup cooking oil
12-14 cups water
300g plum tomato
2-3 green chilli
coriander (required)
1 tsp granulated sugar
half cup oil
1 onion (sliced)
4 cups mutton stock
3 cups rice (soaked)
2 cups carrot (julienne)
1 tsp sugar
2 tsp black raisins

Marinate lamb with salt, red chilli powder, black pepper, turmeric powder, ginger powder, garlic powder, mandi masala, lemon juice, and olive oil for 45 minutes.

Heat half cup cooking oil in a large pot and fry the lamb pieces on each side for 8-10 minutes.

Add water as required (12-14 cups) and cover the pot; cook on low flame for 2 hours or until the meat is tender.

After 2 hours, brush the lamb with saffron water and cover; bake in the oven at 170°C for 20 minutes.

For the tomato sauce, blend 300g plum tomatoes, 2-3 green chillies, coriander, 1 tsp salt, 1 tsp granulated sugar, and 2 tsp lemon juice.

In a separate pan, heat half cup oil and fry sliced onion until golden.

Add 4 cups mutton stock to the onions and then add 3 cups soaked rice; cook until the water is dry.

Cover and cook on low flame for 8-10 minutes.

In another pan, heat 2 tsp oil and fry 2 cups julienned carrots for 3-4 minutes.

Add 1 tsp sugar and 2 tsp black raisins; stir fry.
